Pizza In A Bowl
I've been putting my Vita Mix to good use lately. Everything from homemade baby food, to soups, to smoothies, to green smoothies and it's all so good.
Not only are the ingredients all fresh and from nature {aka, not man made junk}, but the meals are easy and fast and very good.
Here's one of my family's favorites.
It's the Pizza Soup recipe from the Vita Mix recipe book – but we have made a few modifications. In fact, I might actually modify the soup even more and remove the sausage and cheese {just because I'm on my Candida diet}.
Prepare
1 clove garlic
1 thick slice onion
4 mushrooms
1 thick slice green pepper
8 slices turkey pepperoni
1/2 teaspoon extra virgin olive oil
1 1/2 oz. Italian sausage – cooked & drained (broken into small pieces)
{I sometimes add chicken to this as well.}
Chop the above ingredients, and place them into a microwave safe bowl. Cook on high for 2 minutes. Add to cooked ingredients. Set aside.
Mix
2 1/2 cups (600 mL) boiling water
3 large roma tomatoes
5 tablespoons tomato paste
1 teaspoon oregano
1 teaspoon basil
1/4 teaspoon black pepper
3/4 teaspoon salt
1 tablespoon parmesan cheese
Place above ingredients in Vita-Mix container. Secure the lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #10; then HIGH. Run for 1 to 3 minutes or until steam escapes through lid. Reduce speed to VARIABLE speed #3 and remove lid plug. Add cooked ingredients along with 1/4 cup mozzarella cheese to the soup and blend for an additional 5 to 10 seconds.
Pour into bowls – serve with nothing or your favorite bread/cracker.
{We sometimes add a handful of shredded mozzarella to each bowl. You can also add chopped up meats … the ingredients listed in the recipe, or chicken, if you like a thicker soup.}
Eat – savor – enjoy! This warm, spicy soup is perfect for the fall and winter months.
It really is that good!

One of our fav little restaurants makes a soup called "jersey tomato" They top it with croutons and cheese like you would french onion. It sounds very similar to this! Yum-o

I used to love to cook. I was always trying out new things, but when I met my husband that all changed. He is so picky, and my 5-year old son is just like him.
They won't eat vegetables, casseroles, stir-frys, nothing. They eat BBQ meat, potatoes, and corn. My 8-year old daughter is like me, she loves a wide variety of foods and loves to try new things, but when you have to please 2 picky eaters too, well, we're out of luck.
I have lost all passion for cooking, in fact, I absolutely hate it. Where's the fun in cooking the same boring foods every night? So I just wanted to say, that I envy you Nell, LOL
He looks super happy! That is really all you can ask for when cooking for little ones, right?!
